Resumen
[ES]os propóleos son un conjunto de sustancias de apariencia resinosa utilizadas por las abejas para cubrir y proteger la colmena, obtenidos a partir de las yemas y cortezas de algunos árboles. La mayoría de los propóleos comparten una considerable similitud en su naturaleza química general: 50% de resina, 30% de cera, 10% de aceites volátiles, 5% de polen y5% de otros compuestos orgánicos. Es un producto rico en componentes bioquímicos de entre los que se han identificado más de 300 incluyendo varios polifenoles, flavonoides, ácidos fenólicos y sus ésteres, aldehídos fenólicos y cetonas, terpenos, esteroles, vitaminas y aminoácidos entre otros.
Las propiedades bioactivas de los propóleos se relacionan principalmente con la presencia de fenoles y flavonoides. Se considera un magnífico biorregulador, rehaciendo la capacidad de defensa, funcionamiento y adaptación del organismo. Los propóleos son una fuente natural de antioxidantes, que protegen a los aceites y lipoproteínas séricas de la oxidación, destacando sus efectos en la producción de anticuerpos y fortalecimiento del sistema inmunológico. Son numerosos los trabajos científicos centrados en los flavonoides en los propóleos y los relativos a la identificación y cuantificación de su composición polifenólica. Diferentes métodos, tales como el FRAP, ABTS o DPPH, han sido utilizados para evaluar su poder antioxidante.
Los oligoelementos presentes en los propóleos justifican muchas virtudes, pues participan en procesos metabólicos, fermentativos y vitamínicos. Sin embargo, también puede ser un riesgo la presencia de elementos pesados como Pb, Cr, como posibles contaminantes. Las determinaciones de oligoelementos en los propóleos se utilizan como elemento diferenciador de las zonas geográficas donde se han producido y de su composición.
Parece pues que las diferencias de composición química, actividad biológica y terapéutica de los propóleos depende de diversidad fitogeográfica de la zona de recolección, clima, variedad de la abeja reina, época de recolección, etc. Estas diferencias serían susceptibles de verse reflejadas en los espectros NIR. Las técnicas quimiométricas junto con la tecnología NIR permitirían, por tanto, conocer la trazabilidad alimentaria y ayudar al sector apícola a identificar y proveer información de un producto como los propóleos de gran valor añadido.
